Anyone who believes all steakhouses in Las Vegas are created equal has obviously never stepped foot in STK at the Cosmopolitan. The first thing you will notice is the vibrant color scheme instead of the traditional wood-paneled walls and dark leather armchairs. STK has a bright, modern design featuring a red and white color palette and curves in all the right places.
The Cosmopolitan is part of the CityCenter complex making this one of the more convenient Vegas Strip restaurants to access regardless of where you are staying in the city.
The bar serves as a focal point for the space. It sits right in the middle of the action inviting guests to mix and mingle while sipping on premium alcoholic beverages. And it is probably one of the only steakhouses on the planet employing a resident DJ to keep the atmosphere lively.
Executive chef Stephen Hopcraft is the man responsible for creating the contemporary steakhouse cuisine offered at STK. Before joining the ONE Group, Hopcraft demonstrated his knack for finding innovative flavor combinations using the freshest ingredients as a contestant on Bravo TVs “Top Chef.” He was also featured on “Chefs vs City” on the Food Network. He is a graduate of the California Culinary Academy of San Francisco and served an internship early in his career with Charlie Trotter before beginning a working relationship with renowned chef Michael Mina.
Signature dishes include all wagyu beef sliders served on a fresh sesame seed bun and garnished with cheese, homemade Japanese pickles and special sauces. Guests can super size this order by adding foie gras, black truffles or both. Another house specialty is 2.5 ounces of foie gras served over waffles with foie butter and huckleberry gastrique. This dish is garnished with micro herbs, a sherry reduction and powdered sugar.
Entrée selections include free-range chicken, big eye tuna, lamb chops, duck breast, sole, beef short ribs and Maine lobster. Guests can customize any dish with more than half a dozen toppings, including shrimp, king crab Oscar, jalapeno onions, and bacon butter. Optional sauces include red wine, béarnaise, blue butter, horseradish, au poivre and chimichurri.
STK is anything but your typical Las Vegas steak house but that’s what makes it such a great place to enjoy fine dining with a Sin City twist. For those who prefer a high-energy atmosphere where the conversation is louder than the sound of silverware touching the china, STK could just be the best steakhouse Las Vegas has to offer.
